I adapted this recipe from vitamix. I cut down on the sugar, butter, and changed a few other things. I love being able to make a batch of something, freeze it, and have it weeks after for a super simple breakfast! Freezer friendly meals = HEALTH FRIENDLY! Make a batch of these. I made these over a month ago, and they still taste fresh after you pull them from the freezer.
1.5 cups of dried rolled oats
0.5 cups of buckwheat flour
1 teaspoon of baking powder
1/2 teaspoon of ground cinnamon
1/2 teaspoon of salt
1.5 cups original almond milk
1/2 cup eggwhite substitute
2 tbsp earth balance (or butter of choice)
1/2 cup light brown sugar
1 overflowing cup of fruit of choice. Think blueberries, strawberries, peaches, or whatever.
2 packages of The Flawless Whey (vanilla)
Preheat oven to 350.
Mix oats, flour, baking powder, cinnamon, and salt in a large bowl. Set aside.
Add the almond milk, egg whites, earth balance (butter) and sugar to a blender. Blend on high for 30 seconds.
Add wet mixture to dry mixture. Mix well.
Fold in fruit.
Add mixture to baking pan. I used mini loafs. But use whatever you have. Make sure you spray the pan well with baking spray.
Bake at 350 for 30 minutes. Let cool on wire racks for 15-20 minutes. Depending on what size pan you use, you should get between 8-12 servings.
Here are the calories based on 8 servings.
186 calories, 4.5 grams of fat, 13 grams of protein. Super yummy!
